Rutabaga Fries

There’s a whole world of vegetables you haven’t heard of, and rutabaga might be one of them. These baked fries are crispy and toasted on the outside, soft and comforting on the inside.

They’re also oil free!

I simply chopped one whole rutabaga and baked it into these fries for breakfast today, paired with another staple of mine – steamed carrots. This made for a cheap and simple yet filling meal that could be duplicated with any favorite vegetable, mine being yam, eggplant, or beets.

Rutabaga can also be boiled and mashed, or sliced and baked in a casserole.
